We caught up with main man Shane Clifford to tell us all about Impala, the newest edition to Cork’s thriving bar scene.
I remember the first time I saw a picture of Cavanagh’s, I fell in love with it straight away. As soon as I walked in the door, I knew immediately we had to try and get it – Shane Clifford.
Shane, who’s from Mullingar originally has been working in bars on and off since he was 16 but after a fateful trip to Electric Picnic he has been involved in the craft beer scene ever since. Himself and his partner Hugh had ran craft beer bars Cassidy’s, PMAC’S & Blackbird in Dublin for several years until finally deciding to go out on their own and heading West. Caribou opened in Galway City in late 2016.
So what is Impala?
Well, Impala is a craft beer bar that has 22 taps, several of which we will rotate (breweries from all over Ireland and the world) but we also serve Beamish, Heineken and Guinness. “At some point about 18 months ago, we met Raf Agapito. Raf has heaps of experience with spirits and wines” So, we ask Raf to join us because we felt that we could offer every bit as good a beer offering with spirits and wines. The lads are hoping to roll out the cocktails in the next few weeks.
